Who says you can’t have warm cookies every night? I’ve been searching for a healthier treat that tastes like comforting goodness with how cold it’s been here on the East Coast. I found this one bowl recipe that is #grainfree #glutenfree #sugarfree (well refined sugar), high in fiber and most importantly really hits the spot (What really satisfies that ooey gooey cookie craving)! I made this cookie recipe my own with some modifications.

These cookies take less than 10 minutes to make – and super easy clean up.

What I love is I you want, you can freeze the cookies on the baking sheet until firm, then transfer to ziplock bags and freeze for up to two months. By freezing individually, I could bake one or two at a time and have warm cookies any night you want to! Love this method, no slicing into a stubbornly hard block of dough, just grab a few from the ziplock and throw them into the oven.

One bowl Ooey gooey healthy chocolate chip cookies

here’s how to make them.

  • 1 egg
  • 1/2 cup unsweetened apple sauce
  • 1 Tbsp butter ( I use @miyokos vegan but anything works)
  • 1 teaspoon vanilla
  • 1 teaspoon maple syrup
  • 1/2 cup (2 scoops) 20/20 Vanilla Fiber/Protein Powder
  • 1/2 cup almond flour
  • 1 tbs baking powder
  • 1 tsp cinnamon
  • 1/2 bag @choczero Dark Chocolate Baking Chips (I also like @hukitchen @evolved ) for an extra special healthy treat, I use Sourse chocolate to help me GLOW with plant based collagen to hydrate and plump. (Use code GLOWWELLNESS to save $).
  • 2-3 tablespoons coconut flour (See below for exact instructions)

  1. Preheat oven to 350°F. Line a pan with parchment paper or a silicon baking sheet,
  2. Melt butter
  3. In a mixing bowl using a hand mixer mix egg, butter, once combined add apple sauce, maple syrup, vanilla
  4. Add remaining ingredients (except chips) and mix until a batter has formed.
  5. No an important part is the mixture will be very sticky so keep adding coconut flour until it comes together to look like regular cookie dough. Start with 1 teaspoon and you can go up to 2 tablespoons.
  6. Add chips
  7. Important: Spoon batter onto The cookie tray but make it very sick, these cookies John spread much and you’re going for that sick Levain bakery type of cookie
  8. Place in oven to bake for 7-9 minutes.
  9. Watch carefully because you want them to be chewy so take them out when they look a little under done to get that ooey goodness!
